Kenyan Chapatti Recipe: Flaky, Golden Layers Served with Dhal and Stew
A deliciously soft and crispy Kenyan chapatti, perfect with hearty vegetable stew and spiced dhal.
Ingredients:
-
3 cups all-purpose or wheat flour
-
1 tsp salt
-
1–1½ cups warm water
-
2–3 tbsp oil or ghee (for the dough)
-
Extra oil or ghee (for layering and frying)
Instructions:
-
Make the dough: Mix flour, salt, and oil, then gradually add warm water while kneading to form a soft, elastic dough. Knead well for about 10–15 minutes.
-
Rest: Cover and let the dough rest for 30–60 minutes.
-
Roll and layer: Divide dough into balls. Roll one out, brush lightly with oil, roll it up like a rope, then coil it into a spiral. Flatten and roll it again.
-
Cook: Fry each chapatti on a hot, lightly oiled pan. Flip until both sides are golden and lightly blistered.
