Kenyan Chapatti Recipe: Flaky, Golden Layers Served with Dhal and Stew


A deliciously soft and crispy Kenyan chapatti, perfect with hearty vegetable stew and spiced dhal.

Ingredients:

  • 3 cups all-purpose or wheat flour

  • 1 tsp salt

  • 1–1½ cups warm water

  • 2–3 tbsp oil or ghee (for the dough)

  • Extra oil or ghee (for layering and frying)

Instructions:

  1. Make the dough: Mix flour, salt, and oil, then gradually add warm water while kneading to form a soft, elastic dough. Knead well for about 10–15 minutes.

  2. Rest: Cover and let the dough rest for 30–60 minutes.

  3. Roll and layer: Divide dough into balls. Roll one out, brush lightly with oil, roll it up like a rope, then coil it into a spiral. Flatten and roll it again.

  4. Cook: Fry each chapatti on a hot, lightly oiled pan. Flip until both sides are golden and lightly blistered.
