🌿 Garam Masala Spice Blend

Ingredients:

  • 2 tablespoons coriander seeds

  • 1 tablespoon cumin seeds

  • 1 tablespoon black peppercorns

  • 1 tablespoon cardamom pods (green)

  • 1 tablespoon cloves

  • 1 small cinnamon stick (or 1 teaspoon ground cinnamon)

  • 1 teaspoon fennel seeds (optional)

  • 1 whole nutmeg (or 1/2 teaspoon ground nutmeg)

  • 2 bay leaves

Instructions:

  1. Toast the Spices:
    In a dry skillet over medium heat, add all the whole spices (except nutmeg if ground). Toast them for 2–3 minutes, stirring frequently, until fragrant. Be careful not to burn them.

  2. Cool and Grind:
    Let the toasted spices cool completely. Then transfer to a spice grinder or coffee grinder and blend into a fine powder.

  3. Add Nutmeg:
    If using whole nutmeg, grate it in at the end. If using ground nutmeg, stir it into the mix.

  4. Store:
    Transfer the garam masala to an airtight container and store in a cool, dry place. Use within 2–3 months for the best flavor.
